Caturra has always been a favored variety throughout the coffee history of Colombia - a small coffee cherry which packs a well-balanced profile with just the right amount of acidity, a lot of sweetness, and a medium chocolatey body.  However, the number of producers who still grow the lovely Caturra has drastically decreased over the years due to climate change and susceptibility to various coffee diseases. The few producers who still preserve their Caturra trees must devote great attention and effort, and this coffee, Parcero or "friend", is a way of recognizing these producers.

The coffee producers contributing towards Parcero are mostly second and third generation, with a few being first generation. They work at their farms alongside their families and hire cherry pickers from the area during the harvest. They have decided to preserve their Caturra trees because they appreciate the quality they can achieve, and in essence, Caturra is part of their tradition. They don’t mind the hard work required to preserve these trees.

All of them are passionate about coffee, producing it with hard labor and love. They are always eager to learn more and improve the quality of their coffee. Hence, they have experimented with different fermentation times. To reduce water consumption during the process, most of them have started to pulp without water, ferment without water, or wash just once or twice.

We are honored to present to you this beautiful Caturra variety coffee, Parcero.  We found the cup profile to be true to its reputation - supremely balanced with sweet notes of gingerbread and chocolate and hints of orange zest and cardamom in the finish.  Please sip and enjoy!

Producers: Seven smallholders (including Wilfredo Uledo in the photos and his red & yellow Caturra)

Processing: Washed.  Hand-picked cherries, 24-50-hour fermentation either in-cherry or depulped, then washed thoroughly and dried on marquesinas (covered raised beds) for 25-50 days
