La Roca is produced by 40 small coffee farmers located in the Cordillera del Dipilto.  The region is actually a nature reserve bordering Honduras with incredible biodiversity of flora and fauna.  It is also well known for its annual celebration of the Fiesta de la Virgen de Guadalupe, named after the sacred rock monument, la Virgen de la Piedra, hence the namesake of our coffee La Roca.  The high elevation, rich soil and microclimates make the Dipilto region ideal for growing exceptional coffees.

Coffee is a source of pride and a shared heritage within the Dipilto community. Coffee producers are committed to sustainable farming practices and understand the importance of preserving the environment for future generations. They prioritize environmentally friendly methods and promote biodiversity on their farms. Aside from working with coffee, the producers dedicate themselves to the crops of other agricultural producers, such as beans, corn, jocotes (tropical plum), and flowers; they have other businesses to diversify their income.

All of these thoughtful sustainable practices and systems from the producers of La Roca definitely do exhibit in the cup.  We selected this coffee for it's incredibly silky body and sweetness with notes of brown sugar, clove, milk chocolate and pear .  Please sip and enjoy!

Additional Growing Information: Families strive to pick cherries at peak ripeness and pulp cherries on the same day.  Fermentation is for 24-36 hours and then dried on shaded raised beds for 12-15 hours.  Shade plants include Ingas, Musaceae, Forest trees.
