Located in the Cajamarca region of northern Peru bordering Ecuador, the San Ignacio and Jaen provinces have recently seen much growth due to the success of specialty coffee production via environmentally friendly practices.  Coffee farms in this region have great biodiversity of natural species, clay soils and constant rain due to the influence of the Huamantanga Forest and National Sanctuary of Tabaconas Namballe.  These natural forests are not only pristine and beautiful, but also create ideal microclimatic conditions to produce specialty coffee in the area.

In 2019, our friends at Caravela and the PECA agronomists started working with a core group of 35 producers from San Ignacio and Jaen.  These coffee growers were selected for their commitment to investing in their farms, improving quality, and developing a sustainable and honorable standard of living for their communities.  The years of hard work amongst the PECA team and core producers have created strong relationships, infrastructure improvements, and new environmentally sustainable practices - all of which has ultimately elevated the quality of coffee.

The coffee we proudly offer you today is named Guayacan after a magnificent and majestic tree with yellow flowers which dots the coffee farms of the PECA program and provide shade and protection for their coffee plants.  This coffee offers a comforting profile with the richness of dark chocolate along with notes of pecan and maple syrup in the finish.  It is the perfect coffee to warm you up on those chilly mornings, so please sip and enjoy!

Processing: Washed / 30-50 hour dry fermentation, then washed 2-3 times. Solar dryers for 15-20 days.  Shade grown under ingas, chalum, and native trees.
