Roaster's approach: "The roast plays an integral part in taming the wild flavors of this honey-processed coffee.  I extended the roast before first crack to develop a creamy body and sugar cane sweetness while still allowing the champagne-like effervescence to play a central role in the flavor profile.  The tasting experience is rounded out on a zesty sweet kumquat note.  Delicious!"
